Yakitori in Higashimatsuyama is not chicken. It is pork cheek and jaw, skewered and grilled, and eaten with a chilli-spiked miso paste spooned on at the table — the name stayed even though the meat changed. It was worked out just after the war by the first owner of a shop called Daimatsuya, using a cut nobody else wanted, and the miso sauce spread from that one place to roughly fifty shops clustered around Higashimatsuyama Station.

The cut is the argument. Jaw meat is worked muscle with fat running through it, so it stays juicy over charcoal in a way breast never does, and the miso is hot enough to need beer. Shops range from counters with six stools to takeaway windows selling skewers by the dozen, and the town treats the whole thing as ordinary weekday food rather than a speciality to be marketed.

Around fifty shops are concentrated within walking distance of Higashimatsuyama Station on the Tobu Tojo Line, from Ikebukuro. Most are small counters or takeaway windows; several open in the late afternoon and evening only, with one long-standing takeaway shop running 4:00 PM to 8:00 PM and taking orders from 1:00 PM. Hours, closing days and prices vary by shop — the tourist information at the station keeps a list.
