Mamebu is a dumpling of wheat dough wrapped around walnut and black sugar, boiled and served in a clear soy-based broth with burdock, carrot, mushroom and konjac. Sweet and savoury in the same bowl, which is the thing people either find delightful or cannot get past on the first spoonful.

It comes from Yamagata-cho in the uplands of Kuji, where it was made for weddings, New Year and other formal occasions rather than as everyday food. It was almost unknown outside the district until a 2013 television drama set in Kuji put it in front of the country, since when it has been served more widely in the city. The name is said to come from the wish that the family would be mame — healthy and diligent.

That combination is the whole dish and it divides people. **It came from Yamagata-cho.** The upland district of Kuji, not the coast, and it was celebration food rather than everyday cooking. **A 2013 drama made it national.** Before that it was barely known outside the district. Places serving it in Kuji have multiplied since, which is worth knowing when judging authenticity. **Roadside stations sell it.** Both cooked and as packs to take home, which is the easiest way to try it without hunting for a restaurant. **The name is a wish.** Mame means healthy and diligent, and the dish was served to families as an expression of it.
