Tochio abura-age is not the thin fried tofu pouch sold everywhere in Japan. It is a slab roughly 20 centimetres long and three centimetres thick, fried twice — first at a low temperature to swell it, then hot to set the crust — so that it comes out puffed and structural rather than flat. Tochio, now part of Nagaoka, has made it since the middle of the Edo period, when it was food for pilgrims to the Bishamondo temple, and the town still supports a cluster of specialist fryers for a population that no longer justifies it.

Bishamondo Honpo is one of those shops, run by a family whose head also performs as the local costumed hero at town events. It fries to order, sells versions cured with miso or kimchi, and has a small counter where the standard set is a fresh abura-age with soft tofu.

Kitanigoro 1121-5, Nagaoka City. By car from central Tochio and from Nagaoka Station; no practical public transport. Eat-in counter on site. Grilled abura-age is served with green onion and soy sauce; miso-cured and kimchi versions are sold to take away.

**Eat it there, hot.** The thing loses its point once it cools and is reheated. The counter set exists for that reason. **It is a main dish here, not a garnish.** One abura-age is a portion. Ordering two per person because they look like a side is a common misjudgement. **Several fryers, all different.** Tochio has a handful of specialist shops within a few kilometres and locals hold firm opinions about the differences in crust and oil. Doing two in an afternoon is a reasonable plan and the town tourist material lists them. **Closed Wednesdays and remote.** This is a drive from Nagaoka Station for a piece of fried tofu. Check the day before committing, and pair it with the Tochio townscape or the Bishamondo temple the food is named after.
