The Hayasui strait between Kyushu and Shikoku runs a tidal current strong enough that horse mackerel and mackerel living in it develop firm, heavily worked flesh with a fat content that ordinary coastal fish never reach. Caught by single line off Saganoseki and landed alive, they are sold as seki-aji and seki-saba and command prices several times those of the same species from anywhere else.

The handling is what makes it a brand. Fish are hand-lined one at a time, never netted, kept in seawater tanks and killed by ikejime at the moment of sale, and the fishery counts its catch by eye without weighing to avoid bruising. Mackerel in Japan is normally cooked or cured because it spoils quickly; the point of seki-saba is that it can be eaten raw, and in Saganoseki that is how it is served.

Saganoseki, Oita City, by car east of central Oita along the coast road. The Amabe-no-Sato Seki-aji Seki-saba Kan on the headland has a second-floor restaurant with sea views serving a seafood bowl of the day's local fish. Several other restaurants in Saganoseki and along the Route 197 coast serve the same fish, and the roadside station at Saganoseki is the easiest stop. Hours and prices vary by restaurant — confirm before travelling.

**Season splits the two fish.** Seki-saba is at its best roughly October to March, seki-aji through the warmer months. Ordering the wrong one out of season is the common mistake. **Ask whether it is genuine Saganoseki.** The names are protected and traceable, and any restaurant serving the real thing will say so without hesitation. Elsewhere in Oita, aji and saba on a menu are usually not these. **Prices reflect the fishery, not the restaurant.** A seki-saba sashimi plate runs well above ordinary mackerel and that is the correct price for line-caught, tank-held, ikejime fish. Cheap seki-saba is not seki-saba. **Ryukyu is the other order.** Oita's local dish of raw fish marinated in soy, sesame and ginger is served across the prefecture and is excellent made with the same fish. **The strait is the attraction as well.** The headland road out to Saganoseki looks across to Shikoku and the tidal race is visible from the shore, which explains the fish better than any menu note.
