Hiyajiru is a cold soup poured over rice: grilled and ground dried fish, sesame and miso, thinned with cold dashi and finished with sliced cucumber, shiso, myoga and tofu. It is eaten in summer, when the Miyazaki plain is hot and humid enough that nobody wants a hot meal and farm work still has to be done.

The original was cruder — farmers put raw miso on barley rice and poured water over it. The refinement came later: the miso is spread on a board or in a bowl and grilled until it caramelises, which is what gives the finished soup its depth. It is now served year-round in restaurants across the prefecture and sold as instant packets, but the season is genuinely summer and that is when it makes sense.

That caramelisation is the difference between good hiyajiru and salty cold water. **Summer is the season.** It exists because the plain is hot and humid and farm workers still had to eat. In February it is a curiosity. **Pour it over the rice yourself.** It arrives separately in most places. Adding it all at once and eating fast is the correct method. **Buy the instant packets.** Sold in supermarkets across the prefecture and genuinely decent. They are the easiest Miyazaki souvenir to carry. **Order it with chicken nanban.** The two together are the standard Miyazaki lunch and the cold soup cuts the fried chicken exactly as intended.
