Namero is a fisherman's dish and the method explains the name. Horse mackerel or sardine, filleted on a moving boat, chopped on the board together with miso, spring onion, ginger and shiso until it turns to a coarse paste — no fire, no knife skills, nothing that can spill. It is so good, the story goes, that you lick the plate clean, and that is where the word comes from.

Sanga-yaki is the second act. Fishermen took the leftover namero up into the hills when they went to work there, packed into an abalone shell, and grilled or steamed it at the hut. In old Chiba dialect a house was called ga, so food eaten at the mountain house became san-ga. Both are still made all over southern Boso; a research association promotes them and more than thirty restaurants and inns serve them.

Chikura-cho, Minamiboso and across southern Boso. More than thirty establishments across the southern peninsula serve namero and sanga-yaki through the Minamiboso Namero Research Association. Confirm individual opening hours and prices before travelling.

**Order both.** Namero raw and sanga-yaki grilled are the same paste treated two ways, and eating them together is how the dish makes sense. Most places that do one do the other. **It is not tartare and it is not sashimi.** The miso is worked in until the texture changes. If you are expecting chopped raw fish with a dressing, adjust. **Season matters for the fish.** Aji is at its best from late spring into summer along this coast, which is when namero is best. **Look for the association sticker.** More than thirty places across southern Boso are members of the promotion association, which is a reliable filter in a region where a lot of restaurants serve seafood. **Daitokuya is the origin claim.** Confirm hours before making a special trip.
