Mamebu is a dumpling of wheat dough wrapped around walnut and black sugar, boiled and served in a clear soy-based broth with burdock, carrot, mushroom and konjac. Sweet and savoury in the same bowl, which is the thing people either find delightful or cannot get past on the first spoonful.

It comes from Yamagata-cho in the uplands of Kuji, where it was made for weddings, New Year and other formal occasions rather than as everyday food. It was almost unknown outside the district until a 2013 television drama set in Kuji put it in front of the country, since when it has been served more widely in the city. The name is said to come from the wish that the family would be mame — healthy and diligent.
