Shirokuma is shaved ice under condensed milk with fruit and beans on top, and it is Kagoshima's, invented at this shop in 1947 by a man named Kubo Takeshi. The name means polar bear, from the way the fruit was arranged on the original — seen from above it looked like an animal's face. It is now sold in convenience stores across Japan in cup form, which is to the original roughly what instant coffee is to coffee.
The shop is in the Tenmonkan arcade and the full-size version arrives as a dome considerably larger than a person's head, for two people or one determined one. There are more than a dozen variations from around ¥600, and a handheld bar version for eating while walking. Kagoshima is hot and humid for a long stretch of the year and this is what the city does about it.
