Niigata's katsudon has no egg in it. Thin pork cutlets are fried, dipped straight into a soy-based tare while still hot, and laid over rice — that is the whole dish. It is faster, lighter and much less sweet than the simmered egg-bound katsudon eaten everywhere else in Japan, and in Niigata it is simply what katsudon means.

Tonkatsu Taro in the Furumachi district is where the form was set, in the years before the war, and the shop is still the reference point locals send visitors to. The cutlets are cut thin deliberately so that more surface takes the tare, and a bowl carries four to five of them. A branch inside Niigata Station opened after the main shop came close to closing, which makes the dish reachable in the gap between trains.

Furumachi-dori 6-bancho 973, Chuo Ward, Niigata City, about 15 minutes by bus from Niigata Station. The station branch is on the second floor of CoCoLo Niigata, west side, open 11:00 AM to 8:30 PM with last order at 8:00 PM; katsudon ¥1,400. Hours and closing days at the Furumachi shop differ from the station branch — confirm before travelling.

**Cutlets are thin on purpose.** People who order expecting a thick tonkatsu are disappointed for the wrong reason. Thin means more crust per bite and more crust means more tare. **The station branch is not a compromise.** It opened as an extension of the original operation, and for a traveller changing trains it is the sensible choice. The Furumachi shop is the one to make time for if the district is on your route anyway. **Furumachi is worth the bus ride.** It was Niigata's merchant and geigi quarter and still supports the last working geigi outside Kyoto and Tokyo. Lunch here and a walk through the arcades is a better afternoon than eating at the station. **Queues at peak.** Both locations run 10 to 20 minutes behind at 12:00 and 6:00 PM. Arriving at 11:00 AM or after 2:00 PM removes the wait entirely.
