Tokushima ramen (徳島ラーメン) is distinct from other regional ramen styles, featuring a dark brown pork bone broth (豚骨醤油, tonkotsu shoyu) simmered for hours until thick and intensely savory, topped with tender braised pork belly, raw egg cracked over the hot broth, and moyashi (bean sprouts). The egg yolk breaks and mixes into the soup, creating a creamy, rich texture. The ramen is served with a side of white rice, meant to be eaten simultaneously — a carb-on-carb pairing locals insist is essential.

Three regional styles exist: brown broth (most common), yellow broth (lighter soy), and white broth (pure tonkotsu). The brown style dominates Tokushima City.

Both are excellent; try both if time allows. **Raw egg technique:** The egg yolk should be broken and stirred into the broth within the first minute while soup is hottest — this partially cooks the egg, thickening the broth. Eat the pork and noodles first, then drink soup (now egg-enriched). Purists insist on stirring rice directly into the remaining broth for the final course. **Late-night option:** The ramen's heaviness and high calories make it ideal hangover prevention food. Expect rowdy atmosphere after midnight. **Instant version:** Tokushima ramen instant noodles are sold at convenience stores and souvenir shops (¥200–300/pack) — surprisingly accurate reproduction of the brown broth style.
