Yokohama is the birthplace of Iekei Ramen (家系ラーメン, 'family-style ramen'), a distinctive style featuring thick tonkotsu-shoyu broth (pork bone and soy sauce blend), flat wide noodles, and standard toppings of chashu pork, spinach, and nori seaweed. The style was created in 1974 by Yoshimura Minoru at his shop Yoshimura-ya (吉村家) near Yokohama Station, and it spawned hundreds of affiliated shops using '-ya' (家) suffix in their names.

Iekei ramen is highly customizable — customers specify noodle firmness (hard/normal/soft), oil level (normal/more/less), and broth intensity (normal/rich/light) when ordering. The thick, creamy broth coats the noodles and clings to the wide, flat shape. The style is heavier and saltier than Tokyo-style shoyu ramen, designed to satisfy manual laborers in Yokohama's port district. Today, Iekei has spread throughout Japan, but Yokohama remains the heartland with the highest concentration of '-ya' shops.

Yoshimura-ya (吉村家, original Iekei shop): Near Yokohama Station west exit. Other Iekei shops: Sugitaya (杉田家, ¥800), Jyakkiya (寂々家, ¥880). Most shops open lunch and dinner, close 深夜–early morning. Standard order: 'futsu' (普通, normal firmness/oil/richness) for first-timers. Cash only at most shops.

**Yoshimura-ya pilgrimage:** The original Iekei shop still operates near Yokohama Station (exact location has moved but stays in same neighborhood). Expect 15–45 min wait during peak meal times (12:00–13:00, 19:00–21:00); line moves steadily. Order at vending machine: select ramen size (並 normal ¥850 or 大 large ¥950), add toppings (extra chashu ¥200, soft-boiled egg ¥100), receive ticket. When seated, staff ask customization preferences: noodle firmness (kata-men 硬麺 hard, futsu 普通 normal, yawa-men 柔麺 soft), oil level (oi-me 多め more, futsu 普通 normal, sukuname 少なめ less), broth richness (koi-me 濃いめ rich, futsu 普通 normal, usume 薄め light). First-timers should order 'futsu' (normal) for all three to experience intended balance. **Customization guide:** Noodle firmness: 'kata-men' (hard) is preferred by regulars — noodles retain chew and don't become soggy in thick broth. Use provided ginger and garlic (table condiments) to adjust flavor mid-bowl — many regulars add garlic halfway through for flavor boost. Finishing the bowl completely (including drinking broth) is appreciated but not required if too salty. Slurping noisily is normal and expected.
