Zunda mochi represents Sendai and Miyagi Prefecture's most distinctive sweet, a beloved confection where mochi rice cakes are coated in a vibrant green paste made from crushed edamame (young soybeans). The preparation involves blanching fresh edamame, removing the beans from their pods, grinding them into a slightly textured paste, and sweetening the mixture with sugar to balance the beans' natural vegetal flavor. The result is a paste with beautiful natural green color, subtle sweetness, and distinctive edamame taste that differs completely from the more common red bean (anko) sweets. The zunda coating partially covers soft, chewy mochi, creating textural and flavor contrasts between the smooth bean paste and glutinous rice cake. The dish exemplifies Tohoku's agricultural heritage—Miyagi produces excellent edamame, and the region's mochi rice cultivation and mochi-pounding traditions run deep. Zunda's origins trace to local farmers creating simple sweets from available crops, but the preparation has been refined over generations into an iconic regional specialty. Beyond traditional mochi form, zunda paste now appears in numerous modern applications including zunda-flavored shakes, ice cream, cakes, and bread, but the classic zunda mochi preparation remains the purest expression of this uniquely Sendai flavor. The vivid green color makes zunda sweets immediately recognizable and Instagram-worthy, contributing to their popularity among younger generations and tourists seeking distinctive regional treats.
The name zunda is generally traced to jindachi-mochi, a reference to soybeans mashed with a sword hilt (jin-dachi) in a folk etymology tied to the regional warlord Date Masamune, though food historians treat the story as a colorful attribution rather than a documented origin — what's better established is that Miyagi's fertile plains and mild climate have long supported excellent edamame cultivation, giving the region a reliable surplus of young soybeans that found their way into sweets as naturally as red beans did elsewhere in Japan. Making the paste well is less forgiving than it looks: edamame's flavor and color both fade quickly once shelled, so the best zunda depends on beans processed close to harvest and used the same day, which is why specialty shops in Sendai treat freshness as their main point of pride over rival producers rather than competing primarily on sweetness or presentation. The color itself, a genuinely vivid green rather than the muted tones typical of most traditional Japanese sweets, is entirely natural, with no food coloring involved, which surprises many first-time visitors who assume it must be artificially enhanced.
