In 1966 the owner of a sushi shop in Miyazaki City made a roll of boiled prawn, lettuce and mayonnaise. At the time raw vegetables and mayonnaise in sushi were considered wrong, and he made it because a friend who could not eat raw fish wanted something he could. It worked, and by the late 1970s supermarkets across Japan were selling versions of it as salad rolls.

So the salad maki on every conveyor belt in the country traces back to one shop in Miyazaki, which is a reasonable claim to fame for a prefecture better known for chicken. Ippei Sushi still makes the original, and the technique is in the rolling — firm enough to hold, loose enough that the lettuce still snaps. Shops across the city serve their own versions.

Served across Miyazaki City at sushi restaurants, supermarkets and department store food halls. Ippei Sushi, whose first-generation owner Shoji Muraoka created the roll in 1966, has its main shop in the city. The roll contains boiled prawn, lettuce and mayonnaise in vinegared rice and nori. Individual establishments' hours, rest days and prices vary — confirm before travelling.

**It is the original salad roll.** The salad maki sold nationwide from the late 1970s descends from this 1966 invention. Miyazaki does not make a fuss about it and probably should. **The lettuce should snap.** Rolled firmly enough to hold together but not so hard that the leaf goes limp. That is the whole skill. **Made for someone who could not eat raw fish.** Which makes it a useful order for anyone in a party with the same problem, in a prefecture full of sashimi. **Supermarkets sell it too.** Cheaply and decently, which is the practical option for a picnic on the Nichinan coast. **Ippei Sushi is the source.** The shop that made the first one still serves it, and the difference from a supermarket roll is real.
