Sawachi ryori is Kochi's unique banquet cuisine, served on massive ceramic platters (sawachi) up to 50cm in diameter. Each platter is a work of edible art: katsuo tataki arranged in rosettes, sliced sashimi fanned out in gradients, tempura stacked in towers, sushi rolled into colorful spirals. A full sawachi course includes 5–8 platters for a table of six, passed communally while sake flows freely. It is designed for celebration — weddings, festivals, business victories.

The tradition dates to the Edo period when Tosa samurai would gather for drinking parties, and food needed to be impressive, shareable, and able to last through hours of sake consumption. Today, sawachi is still reserved for special occasions — you won't find it at casual restaurants. The premier place to experience it is at a traditional ryokan or a specialized sawachi restaurant like Tokugetsuro in central Kochi.

**Booking sawachi:** Sawachi is almost never walk-in. You must reserve at least 48 hours ahead and specify party size (minimum 4 people for full course). Your hotel concierge can assist. Some ryokans (like Jyoseikan near Kochi Castle) include sawachi as part of their kaiseki dinner — this is the easiest route for solo or pair travelers. **Etiquette:** Sawachi is communal. Use the serving chopsticks (toribashi) provided on each platter. Take from the outer edge first, working inward. Refill your neighbor's sake cup before your own — this is critical Tosa drinking etiquette. **Drink pairing:** Sawachi and sake are inseparable. The restaurant will offer local sake flights. Accept. Try Tosatsuru junmai or Keigetsu daiginjo — both are Kochi classics. The custom is to pour for others, not yourself. **Modern sawachi alternative:** For a more casual (and affordable) version, visit Tsukasa during lunch (11:30–14:00) for their 'mini sawachi set' (¥3,200) — a single platter with tataki, sashimi, and tempura, designed for two. No reservation needed. **Cultural note:** Sawachi culture reflects Kochi's historical character — extravagant, generous, and sake-loving. The phrase 'Tosa no omotenashi' (Tosa hospitality) is embodied in these overflowing platters.
