Zunda mochi represents Sendai and Miyagi Prefecture's most distinctive sweet, a beloved confection where mochi rice cakes are coated in a vibrant green paste made from crushed edamame (young soybeans). The preparation involves blanching fresh edamame, removing the beans from their pods, grinding them into a slightly textured paste, and sweetening the mixture with sugar to balance the beans' natural vegetal flavor. The result is a paste with beautiful natural green color, subtle sweetness, and distinctive edamame taste that differs completely from the more common red bean (anko) sweets. The zunda coating partially covers soft, chewy mochi, creating textural and flavor contrasts between the smooth bean paste and glutinous rice cake.
