Karashi renkon (辛子蓮根) is Kumamoto's signature food — lotus root stuffed with spicy mustard-miso paste, coated in batter, and deep-fried. The dish was created in the 1600s as health food for the chronically ill feudal lord — lotus root for nutrition, mustard for circulation stimulation. The modern version balances the root's crunchy texture, the mustard's nasal heat, and the fried coating's richness. It's served sliced, revealing the mustard-filled holes in cross-section.
Every izakaya in Kumamoto serves it; specialty shops sell it as gift boxes.
