たこ焼きは大阪の看板の粉もんだ — ゴルフボール大の小麦生地の球にタコを刻んで入れ、専用の穴の鉄板で焼き、たこ焼きソース、マヨ、かつお節、青のりをかける。外はカリッと中はとろりで、この食感には正確な間合いと鉄板さばきの技がいる。
