harako-meshisalmonWatariArahamaseasonal dish

Harako-meshi is rice cooked in the stock from simmering salmon, with the flaked salmon on top and salmon roe over that. Two forms of the same fish on one bowl, and the rice takes the colour and the flavour of the fish because it was cooked in it rather than beside it.

It comes from Arahama in Watari, at the mouth of the Abukuma river where the salmon run, and the town's account is that it was presented to Date Masamune when he came to inspect canal works there. Harako is the local word for the roe. The season runs from around early September to early December, when the wild salmon are running, with a spring version using coho from about April to July. Outside those windows it is not on the menu.

인사이더 가이드

**It is seasonal.** Roughly September to early December for the autumn version. Restaurants announce their own start dates and the town publishes them. **The rice is cooked in the fish stock.** That is the whole technique. A bowl with plain rice under salmon is something else. **There is a spring version.** Coho salmon from around April to July at some shops, which fills the gap for visitors outside the autumn window. **Arahama is the origin.** The fishing district at the river mouth, and the restaurants there are the ones the town's own residents drive to. **Watari was badly hit in 2011.** The coast here was destroyed and rebuilt. The restaurants serving this are part of that recovery.
