히다규(飛騨牛)는 기후현에서 최소 14개월간 사육된 흑모화종 소고기로, 마블링(BMS 5+)에 따라 A5 또는 B5 등급을 받으며 히다규 브랜드추진협의회의 인증을 받는다. 마블링은 모든 부위에 고르게 퍼져 있다 — 지방은 체온에서 녹아 입안을 버터처럼 풍부한 맛으로 감싸며 한 입 한 입 여운을 남긴다. 이 고기의 단맛은 옥수수 위주의 사료와 스트레스 없는 산악 환경에서 비롯된다.

Street skewers have the longest queues at the Kyoya stand (near the middle of Sanmachi) 11:00 AM–2:00 PM; arrive before 10:30 AM or after 2:30 PM.
