Champon travelled from Nagasaki through Kurume to Hita in Oita, and then across the Bungo channel by ferry to Yawatahama, which has been the ferry port for Kyushu since the Meiji period. What arrived was adapted. The Yawatahama version has a clear golden broth made from chicken bone, bonito and kelp rather than the white pork-bone soup of Nagasaki, thick Chinese noodles, a great deal of vegetable, and — the local marker — kamaboko and jakoten, the fish cakes this fishing town makes.

It is a genuinely everyday food here. The result is lighter than any other regional champon in Japan and tastes distinctly of the sea rather than of pork.

인사이더 가이드

**It is not Nagasaki champon.** Clear golden broth from chicken bone, bonito and kelp, not white pork-bone soup. If it arrives white, it is not the local version. **Look for the fish cake.** Kamaboko and jakoten in the bowl are the Yawatahama marker and reflect what the town actually makes. **Thirty-plus places serve it.** Including a sushi shop and several cafés, which tells you how ordinary it is here. The city publishes a list. **It came off the ferry.** Yawatahama has run boats to Oita since the Meiji period, and the dish crossed the Bungo channel with the traffic. That is the whole origin story. **Combine with the fish market.** Yawatahama's Doya Market at the port sells the day's catch and is a few minutes from most of the champon shops.
