Akita Prefecture is one of Japan's top sake-producing regions, with cold winters, pure mountain water, and high-quality rice (especially Akita Komachi variety) creating ideal brewing conditions. The prefecture is home to 40+ sake breweries, many operating since the Edo period. Akita's sake style tends toward light, fragrant, and smooth (tanrei-karakuchi, 淡麗辛口), contrasting with richer, sweeter styles from Niigata or Hiroshima.
Several breweries in Akita City offer tours and tastings. The tasting room offers samples of junmai, ginjo, and daiginjo grades (¥500 for 5 small cups). Watching the brewing process — massive cedar fermentation tanks, rice steaming rooms, bottling lines — demystifies sake production. The brewery shop sells limited-edition bottles unavailable elsewhere.
