Kurayoshi Beef-Bone Ramen

Almost all ramen in Japan is built on pork bones, chicken or fish. In central Tottori it is built on beef bones, and has been since at least the 1950s — Kurayoshi is generally named as where it started. The broth is pale brown, considerably lighter than tonkotsu, with a sweetness and a distinct beef-fat aroma that people either take to immediately or find strange.
Why it happened here is not fully settled; the usual explanation is that this was cattle country and beef bones were what the butchers had going spare. It stayed a purely local dish for half a century and was only given the name gyukotsu ramen and promoted outside the prefecture from around 2009. Two dozen or so shops in Kurayoshi and the surrounding towns make it. Inoyoshi, trading since about 1962 and now in its third generation, is among the long-established ones.
