Kyoto Gyoza — Crispy Pan-Fried Dumplings
While gyoza (餃子, Chinese-style dumplings) originated in China, Kyoto has developed its own regional style emphasizing vegetable fillings and crispy pan-frying technique. Kyoto gyoza shops often use Kyoto-grown vegetables (Kyo-yasai) like mizuna and negi (leeks), creating lighter, less garlicky fillings than standard gyoza. The dumplings are pan-fried until the bottoms are crackling crisp while tops remain tender.
The most famous gyoza destination is Osaka Ohsho (大阪王将), which despite the name is Kyoto-based and serves gyoza as the main attraction rather than ramen side dish. The chain's original shop (honten) is near Kyoto Station.
