Nagoya Tenmusu — Tempura Shrimp Rice Balls
Tenmusu (天むす) are Nagoya's iconic rice balls — plump shrimp tempura wrapped in lightly salted rice and nori seaweed, creating a portable snack combining crispy, savory tempura with the comforting simplicity of onigiri. The dish was invented in 1959 at Senju, a small restaurant in Tsu City (Mie Prefecture, adjacent to Aichi), but became so associated with Nagoya through regional chain expansion that it's now considered Nagoya soul food.
Proper tenmusu uses whole kuruma-ebi (Japanese tiger prawns) or large black tiger shrimp, lightly battered and fried to golden crispness, then immediately wrapped in rice while still warm. The rice is seasoned with subtle sweetness (mirin, salt), and the nori wrapper provides umami contrast. The result is finger food perfection — satisfying, not too heavy, suitable for any time of day. Nagoya residents buy tenmusu for picnics, train journeys, office lunches, and late-night snacks.
