Okado Somen

Okado somen does not come in the straight bundles that somen comes in everywhere else. It is hand-stretched, then coiled into a flat spiral bun — the shape is called marumage after a married woman's hairstyle — and packed that way, which means you break off a coil rather than untying a bundle. The noodle is unusually firm for somen, with a real bite and a smooth finish.
It started in 1848, when a travelling medicine seller from Daimon village in what is now Tonami learned the method used for somen supplied to the Kaga domain and brought it home. At its peak in the early Showa period more than sixty households were making it; nine were still doing so at the start of 2025. Production runs from October to March with the peak around February, because the drying needs cold dry air. It is sold locally and by mail order and is one of the few Toyama souvenirs that keeps indefinitely.
