Soup Curry — Hokkaido's Spiced Comfort Bowl
Soup curry (スープカレー) is Sapporo's modern culinary invention — a thin, broth-based curry stew served with large chunks of roasted vegetables (pumpkin, eggplant, potato, bell pepper) and a protein (chicken leg, lamb, pork). Unlike thick Japanese curry rice, soup curry is liquid, allowing complex spice blends (cumin, coriander, turmeric, garam masala) to shine. Developed in the 1970s by a Sapporo café experimenting with medicinal herb soups, it became a local obsession by the 1990s.
Suage+ (スープカレーSuage+) is consistently ranked Sapporo's best, located in a residential neighborhood far from tourist zones. The signature 'Chicken and Vegetable' curry features a whole bone-in chicken leg, 8-10 roasted vegetables, and a choice of 5 spice levels and 10 soup bases (tomato, coconut, herb, etc.). The soup is clear, aromatic, and addictive.
