The atmosphere is chaotic, aromatic, and irresistibly appetizing — vendors call out, steam rises from cooking pots, and live crabs wave claws from tanks.
The market's specialty is ikura-uni donburi (海鮮丼) — a rice bowl topped with salmon roe and sea urchin, often adding crab, scallops, and squid sashimi. Restaurants inside the market serve these bowls made-to-order using seafood purchased meters away. The quality difference between Hakodate's morning-catch uni and Tokyo's 2-day-old uni is profound.
