Nagano Prefecture (historically called Shinano or Shinshu) is Japan's premier soba-producing region, thanks to its high altitude, volcanic soil, and cold climate — ideal for growing buckwheat. Shinshu soba is prized for its fragrant, slightly nutty flavor and firm texture. Traditional soba is made with 80% buckwheat flour and 20% wheat binder (ni-hachi soba), hand-cut into thin noodles, and served cold with dipping sauce or hot in broth.

Matsumoto's old town (Nakamachi) is lined with soba shops ranging from humble family operations to refined establishments serving juwari soba (100% buckwheat, no wheat, extremely difficult to make). Soba is eaten at all times — breakfast, lunch, or dinner. Proper etiquette: slurp noisily to aerate the noodles and appreciate the aroma, drink the soba-yu (hot buckwheat cooking water) at the end mixed with leftover dipping sauce.

**Juwari soba (100% buckwheat):** This is the ultimate test of a soba chef's skill — no wheat binder means the noodles are fragile and break easily. The result is intensely nutty, earthy flavor. Kobayashi Soba (reservation required, ¥1,400 for zaru soba set) is one of Matsumoto's best for juwari. Note: juwari soba is coarser and less smooth than ni-hachi — an acquired texture. **Seasonal soba:** Shin-soba (新蕎麦, 'new buckwheat') harvested in October–November is the most aromatic, with vibrant green color. Shops announce shin-soba season with banners; this is the time to visit if possible. The flavor difference is noticeable — fresh vs. Aged buckwheat. **Soba etiquette deep dive:** Don't bite the noodles; pull the entire mouthful in one slurp. Dip only the bottom third of noodles in tsuyu sauce (dipping the whole thing oversaturates). After finishing, request soba-yu (buckwheat water) — pour it into remaining tsuyu and drink like a savory tea. This ritual is non-negotiable for soba purists. **Oyaki pairing:** Oyaki (おやき) are Nagano's steamed dumplings filled with nozawana pickles, mushrooms, or red bean paste. Many soba shops serve oyaki as side dishes (¥200–300). Nozawana oyaki + cold soba is the classic Nagano combination.
