Karashi renkon (辛子蓮根) is Kumamoto's signature food — lotus root stuffed with spicy mustard-miso paste, coated in batter, and deep-fried. The dish was created in the 1600s as health food for the chronically ill feudal lord — lotus root for nutrition, mustard for circulation stimulation. The modern version balances the root's crunchy texture, the mustard's nasal heat, and the fried coating's richness. It's served sliced, revealing the mustard-filled holes in cross-section.

Every izakaya in Kumamoto serves it; specialty shops sell it as gift boxes.

**Eating technique:** Slice the fried renkon 1cm thick to preserve the hole pattern. Eat within 2 hours of frying while the coating is crispy and the mustard still pungent. Karashi renkon sold at train stations is pre-sliced and wrapped — edible but loses the coating crunch. **Spice level:** Different shops make different-strength mustard paste — some keep it family-friendly, others make extra-hot versions (大辛) for spice enthusiasts; specify when ordering. **Pairing:** The standard pairing is cold beer or cold sake. The frying oil's richness and mustard's heat need cold liquid to reset the palate between bites. Kumamoto's local Zuisen sake (瑞鷹) works particularly well.
