下关是名符其实的河豚之都,处理全日本80%的渔获量,也是唯一设有专门河豚批发市场的城市。唐户市场每日两次化身为热闹的海鲜市集,摊商将极致新鲜的渔获直接拍卖给民众——海胆、活乌贼、生鱼片等级鲔鱼,当然还有那需要持照厨师才能处理的知名河豚,因其含有河豚毒素。
市场的周末寿司摊(每周五至周日与假日,10:00–15:00)供应现切握寿司,每贯¥100–150,还有烤鲸鱼、河豚唐扬(炸河豚)与海胆盖饭。摊商此起彼落的叫价声、刀锋划过鲜鱼的清脆声响,加上邻近关门海峡吹来的海风,构成山口县最原汁原味的美食体验。冬季(11月至3月)是河豚的黄金季节,此时鱼肝所积累的毒素与风味都达到顶峰。
