广岛烧(广岛风大阪烧)是广岛的招牌疗愈美食——以薄如可丽饼的饼皮、堆成小山的高丽菜丝、猪五花、煎蛋,以及关键的炒面,全在铁板上煎成,再淋上甜咸酱汁、美乃滋与青海苔粉。与大阪烧(把所有材料拌入面糊)不同,广岛烧把各层分明堆叠,造出口感对比——酥脆的边、软嫩的高丽菜、弹牙的面、流动的蛋黄,全在一口之中。
这道菜源于战后广岛,当时物资匮乏,摊商以大量高丽菜撑起薄面糊、加便宜的炒面补热量,演变成今日繁复的结构。现代广岛烧有15–20层、依精确顺序堆叠:面糊底、3–4公分高的高丽菜、豆芽、猪肉、天妇罗酥屑,再放上另煎的炒面,最后盖上煎蛋、整座塔翻面。厨师的手艺是关键——在大铁板上同时处理多份、掌握每层时机、完成戏剧性的翻面而不塌。看厨师工作是一场表演艺术;吃下成品那口感与甜咸鲜的交响,是广岛最平易近人又美味的文化体验。
