Nagano Prefecture (historically called Shinano or Shinshu) is Japan's premier soba-producing region, thanks to its high altitude, volcanic soil, and cold climate — ideal for growing buckwheat. Matsumoto's old town (Nakamachi) is lined with soba shops ranging from humble family operations to refined establishments serving juwari soba (100% buckwheat, no wheat, extremely difficult to make).
