大王山葵农场是日本最大的山葵栽培设施,15公顷的梯田由北阿尔卑斯纯净的融雪水灌溉。真山葵极难栽培,需要冰冷洁净的流水与特定的温度范围。农场年产150公吨山葵,供应全日本的高级餐厅。
游客可走过田间,看山葵在清澈见底的涌泉水道中生长,并品尝新鲜的山葵制品:山葵霜淇淋(意外地甜而温和)、山葵可乐饼,以及现磨生山葵配米菓。农场还有一座曾用于黑泽明电影《梦》(1990)的复原水车小屋。山葵根茎需18–24个月才成熟,农场也展示这费工的栽培过程。
