鰻魚飯三吃(ひつまぶし)把炭烤鰻魚切成拇指指甲大小的小丁、鋪在木桶(櫃)的飯上,依序以三種方式品嚐。第一份:原味吃,嚐炭香與甜醬油醬汁在軟嫩鰻魚上的滋味。第二份:加山葵、蔥花與海苔,讓味道更鮮明。第三份:淋上熱高湯或綠茶做成茶泡飯。最後四分之一,就用你最喜歡的方式吃。
名古屋在明治時代發明這吃法,是為了讓鰻魚在冗長宴席中保溫——小丁比整片更能留住熱度,木容器也保溫。如今頂級店以備長炭炭烤國產鰻(日漸稀少,多數鰻魚已來自中國),刷上甜醬油醬汁。每份從活魚到上桌約需15–20分鐘。
