餺飥麵是山梨的代表暖心料理——寬扁的小麥麵條,與南瓜、菇類、馬鈴薯、紅蘿蔔、芋頭一起在味噌湯底裡燉煮。與一般日式麵食將麵條與湯分開烹調不同,餺飥麵是直接在湯裡煮麵,讓澱粉釋出使湯汁變得濃稠,近乎燉菜的口感。成品格外暖胃飽足——這是為了山梨寒冷的山區冬天而發展出的料理。
這道菜歷史可追溯數百年,相傳與武田信玄有關——據說他因為餺飥麵營養密度高、在戰場條件下容易準備,而以此犒賞士兵。現代的餺飥麵餐廳會用鐵鍋(鍋)盛裝上桌,讓熱度在用餐過程中持續保溫。最著名的店家是小作,一間位於甲府近郊的傳統農家建築,自1950年代起就在同一棟建築裡供應餺飥麵。
