上午11:30走進味太助,炭火的煙立刻撲面而來——濃郁、帶著木質調,混著牛脂滴上熾白備長炭的香氣。這家店自1948年起就在同一棟窄樓裡,當年老闆佐野啓四郎開始烤牛舌,是因為駐紮戰後仙台的美軍讓牛舌變得便宜又易得。他把舌切得厚——12mm,而非燒肉那種薄如紙的標準——以鹽與檸檬汁醃整整24小時,再用炭火烤到外層焦脆帶黑斑、內裡仍粉嫩柔軟。
仙台牛舌以特定的方式盛在漆盤上:六片舌呈扇形鋪在盤上、一碗燉到肉自骨頭脫落的牛尾湯、宮城農家的白飯,以及切成細絲的醃高麗菜。牛舌要立刻吃——它涼得快,口感會變。第一口有阻力,那是舌部緻密肌纖維帶來的彈牙,接著化為肉汁與介於牛排與內臟之間的風味。炭火添上一層煙燻,平衡了檸檬醃醬的酸度。肉的紋理呈可見的條紋,靠近舌根處較深,愈往舌尖愈淺、愈嫩。
舌的解剖決定品質。舌根(タン元)油花較多、風味更濃。舌尖(タン先)較瘦、略韌。頂級店只用中段,脂與瘦達到完美平衡。每頭牛約只產1.5公斤可用的舌,其中僅400–500克達到頂級的中段。這份稀缺,正是六片牛舌定食要價¥2,000–2,500的原因——儘管牛舌在別處被視為便宜的部位。
