Awamori (泡盛) is Okinawa's indigenous distilled spirit (25–43% alcohol), predating Japanese shochu by 500 years. It's distilled from Thai indica rice using black koji mold (unique to Ryukyu), then aged in clay pots. The aging process (kusu, 古酒) creates smoother, more complex flavors — awamori aged 3+ years is considered premium, 10+ years is rare and expensive.

Multiple distilleries in Naha offer free tours showing the fermentation, distillation, and aging processes, followed by tasting sessions. Helios Distillery (ヘリオス酒造) and Zuisen Distillery (瑞泉酒造) are most accessible for English-speaking tourists.

Guía privilegiada

Premium
**Tasting strategy:** Awamori is an acquired taste — strong, earthy, sometimes medicinal flavor profile unlike Japanese sake or shochu. At tasting sessions, try: (1) young awamori (1–2 years old, 30% alcohol) — sharpest flavor, (2) kusu (3–5 years aged) — smoother, rounded, (3) aged kusu (10+ years if available) — complexity, almost whiskey-like. Distilleries provide water for diluting (awamori is traditionally drunk diluted or on the rocks). Don't expect to love it immediately — appreciation develops over multiple exposures. **Clay pot aging:** Awamori's aging in clay pots (not wood barrels) creates distinct character — the porous clay allows slow oxidation and mellowing without adding oak flavors. The tradition derives from Ryukyuan ceramic heritage (tsuboya pottery). Some distilleries sell clay aging pots (tsubo, 壺, ¥10,000–30,000) for home aging — an authentic souvenir if you're committed to awamori culture. **Distillery exclusive bottles:** Each distillery sells limited-edition bottles not available elsewhere — special aged vintages, commemorative releases, cask-strength versions. Zuisen's distillery-only kusu (¥3,000–8,000) makes excellent gift for spirits enthusiasts. Bottles ship internationally (distillery arranges, ¥2,000–5,000 shipping for 1–3 bottles). Airport duty-free also sells awamori but lacks distillery exclusives.
