**Lunch value window:** Between 11:30–14:00, restaurants drop prices by 40–50%. Hidagyu Maruaki serves 120g of A5 sirloin with rice, salad, and miso soup for ¥3,500 at lunch — the same cut costs ¥6,500 at dinner. The meat arrives on a sizzling plate, edges already caramelizing. Reservations help on weekends, but weekday walk-ins usually find seats within 15 minutes. **Marbling scores:** A5 means highest yield and marbling level 5. But Hida beef's BMS (Beef Marbling Standard) ranges 5–12 within that grade. Ask servers for BMS 8 or higher when ordering — at BMS 10, the fat webs so densely through the meat it looks like pink marble. Lower scores taste good, but BMS 8+ melts completely on your tongue, coating every taste bud. **Cooking methods:** Yakiniku lets you grill cuts yourself over charcoal, watching fat render and edges crisp. Each piece takes 15–20 seconds per side — overcook and you've wasted premium beef. Sukiyaki simmers thin slices in sweet soy broth, then you dip them in raw egg. The egg cools the meat and adds silk texture. First-timers should choose yakiniku to taste the beef itself, not sauce. **Street skewer cuts:** Vendors display cut names on small signs. 'Rosu' (sirloin) balances fat and meat perfectly. 'Hire' (tenderloin) stays lean and firm. Skip 'bara' (belly) — too fatty for a skewer, it drips and flames. The ¥800 skewers use BMS 7–8 beef; ¥500 versions use BMS 5–6. The ¥300 difference doubles the marbling. Eat within two minutes while the fat's still liquid.
