Hita yakisoba is fried rather than stir-fried, and the distinction is the whole dish. Boiled noodles are pressed onto a hot plate and left until the underside forms a hard crust, then bean sprouts and spring onion are added and the noodles turned so both faces crisp. What arrives is a disc that is brittle on the outside and soft in the middle, with the sprouts still raw enough to snap.

It was invented in Hita in 1957 by the owner of a shop called Sofuren, which is still the reference version and now operates branches across Kyushu and beyond. Around a dozen other shops in the town make their own versions and the local competition is over how hard the crust should be. Hita is a hot inland basin and the dish is heavy, which locals treat as a feature rather than a problem.

Sofuren main shop at Wakamiya-machi 416-1, Hita City, by car from Hita Station. Around a dozen other shops in Hita serve their own versions with individual hours; the tourist information office at the station keeps a list. The dish is cooked to order on a hot plate and served in an iron dish.

**It is served extremely hot in an iron dish.** The crust keeps cooking on the plate. Give it a minute rather than burning your mouth in the first bite. **Ask for it harder or softer.** Most shops will adjust how far they take the crust. Locals order by preference and visitors usually do not know they can. **Sprouts are the counterweight.** They go in late deliberately so they stay raw and snapping against the crisp noodle. A version with limp sprouts has been made badly. **Mameda-machi is the other reason to be in Hita.** The preserved Edo merchant district is nearby and is a designated Important Preservation District, so lunch here fits into a half day on foot. **Hita is a hot town in summer.** A basin surrounded by mountains that regularly tops the prefecture's temperature chart. The dish does not get lighter, but the river and the shaded merchant streets do.
