Zunda mochi represents Sendai and Miyagi Prefecture's most distinctive sweet, a beloved confection where mochi rice cakes are coated in a vibrant green paste made from crushed edamame (young soybeans). The preparation involves blanching fresh edamame, removing the beans from their pods, grinding them into a slightly textured paste, and sweetening the mixture with sugar to balance the beans' natural vegetal flavor. The result is a paste with beautiful natural green color, subtle sweetness, and distinctive edamame taste that differs completely from the more common red bean (anko) sweets.
