Le hoto est le plat de montagne de Yamanashi : des nouilles larges et plates cuites dans un bouillon épais de miso avec potiron, champignons, carotte et porc. Il est servi bouillonnant dans une marmite en fonte. La tradition veut que le seigneur Takeda Shingen l'utilisait comme ration de campagne.
