Route 1 runs through Kameyama and always has, which meant a steady traffic of long-distance lorry drivers and a row of canteens that fed them. What those canteens made was udon fried on a hotplate with meat and vegetables and coated in a red miso sauce — filling, salty and cheap, which is what a driver at two in the morning wants.

It stayed a local dish for decades before the city organised around it, and it is now made in homes across Kameyama as well as in the shops. The miso is the point: red bean miso, which is the Tokai region's soy paste, made up differently by every establishment. Kawamori Shokudo near the Meihan expressway is one of the long-standing ones and makes its own.

Served across Kameyama at canteens, izakaya and restaurants, and made at home. The dish is udon fried on a hotplate with meat and vegetables in a red-miso sauce, and grew out of the roadside canteens serving long-distance drivers on Route 1. Kawamori Shokudo near the Meihan Expressway is a long-established example, serving its own miso alongside grilled meat and set meals.
