Le bœuf Omi (Omi-gyu) est l'une des trois marques de wagyu les plus prestigieuses du Japon (avec Kobe et Matsusaka) et celle qui possède la plus longue histoire : il était déjà exporté vers Tokyo à l'époque Edo, il y a plus de 400 ans, à une période où la consommation de viande était officiellement interdite. Son goût est légèrement plus doux et sa graisse possède un point de fusion plus bas que d'autres wagyu.
Les restaurants des environs d'Omi-Hachiman et Hikone servent ce bœuf en sukiyaki, shabu-shabu et teppanyaki, à des prix généralement inférieurs de 20 à 30 % à ceux de Kobe pour une qualité comparable. C'est l'option pour le gastronome en quête du meilleur wagyu sans la surcote du nom le plus célèbre.
