Beyond hitsumabushi (Nagoya's famous eel dish), Aichi Prefecture offers three distinct unagi (freshwater eel) styles reflecting regional preparation traditions. Nagoya-style hitsumabushi uses finely chopped eel grilled with sweet soy tare and served over rice in a wooden ohitsu, designed for the three-stage eating ritual (plain, with condiments, as ochazuke tea-rice). Mikawa-style unagi features whole eel fillets grilled without steaming (Kanto-style splits eel belly-first, steams, then grills; Kansai-style splits back-first, grills directly without steaming — Mikawa follows Kansai method). Ichinomiya offers yanagawa-nabe, a hot pot of eel simmered with burdock root and egg in soy-dashi broth.

These three styles showcase unagi's versatility and Aichi's culinary regionalism. Each method alters texture and flavor: hitsumabushi's chopped eel retains heat and sauce evenly, whole-grilled Mikawa eel develops crispy skin and smoky char, and yanagawa-nabe creates soft, custard-like eel infused with earthy burdock.

Meilleur moment pour visiter

Lunch (11:30 AM–1:00 PM) at each restaurant offers best value (cheaper sets, same quality). For the three-restaurant pilgrimage, start with Horaiken at 11:00 AM, Unagi no Doi at 2:30 PM for late lunch, and Kawafuku at 6:00 PM for dinner.

Conseils pour éviter la foule

All three restaurants require reservations on weekends — book 1–2 weeks ahead. Doyo-no-Ushi-no-Hi (late July) causes extreme waits (2+ hours walk-in) at all eel restaurants in Aichi; skip that specific day. Weekday lunches are significantly easier with shorter or no waits.

Informations de stationnement

Horaiken: use Atsuta Shrine parking (¥600/hour, 3-min walk) | Unagi no Doi: small lot available on-site (free for diners, limited spaces) | Kawafuku: street parking nearby (~¥400/hour). Train + taxi to each destination is generally more convenient than driving between all three.

Guide d'initié

**Three-style tasting strategy:** For dedicated unagi enthusiasts, a single-day three-restaurant pilgrimage is feasible but intense (requires 6+ hours, eel is rich and filling). More realistically, experience hitsumabushi first (most iconic), then choose between Mikawa whole-grilled (for texture/char lovers) or yanagawa-nabe (for hot pot fans). Each style requires 15–20 minute preparation (eel grilled fresh per order) — embrace the wait as part of traditional Japanese dining's deliberate pacing. **Mikawa-style context:** Unagi no Doi in Okazaki (30 minutes southeast of Nagoya) exemplifies Mikawa region's whole-grilled eel tradition. The eels are split butterfly-style (back incision), skewered, and grilled directly over binchotan charcoal without pre-steaming. This creates crispy, lacquered skin and slightly firmer texture compared to steamed eel. The restaurant uses Mikawa Bay-farmed eel, considered Japan's premium domestic eel due to the bay's brackish water (mixing freshwater and seawater produces meatier texture). The tare sauce is less sweet than Nagoya-style, allowing eel's natural flavor to dominate. **Yanagawa-nabe variation:** Yanagawa-nabe originated in Yanagawa City (Fukuoka) but became popular in Ichinomiya (northern Aichi). The dish simmers eel with gobo (burdock root, earthy and fibrous) in sweet soy-dashi broth, then finishes with beaten eggs poured over to create soft custard. The combination is comfort food — warming, rich, and deeply savory. Kawafuku in Ichinomiya has prepared yanagawa-nabe for 80+ years in a traditional kaiseki setting (tatami rooms, kimono-clad servers). The nabe arrives in a cast-iron pot over portable burner, bubbling gently. Scoop eel, burdock, and custard over rice and enjoy the harmonized flavors.
