Le hitsumabushi est le plat phare de Nagoya : de l'anguille unagi grillee sur charbon de bois et servie sur du riz dans un coffret en bois laque. On le deguste en trois etapes : d'abord nature, pour apprecier la peau croustillante et la chair fondante ; puis avec des condiments (wasabi, nori, ciboule) ; et enfin arrose de dashi chaud verse sur le riz, le transformant en une soupe reconfortante.
