Gujo Hachiman (郡上八幡) is a castle town built on spring water — over 100 natural springs flow through the streets in open stone channels (suiro), where locals wash vegetables, cool bottles, and children catch crayfish. The town's relationship with water is symbiotic: the Yoshida and Kodara rivers converge here, and spring water so pure it's designated one of Japan's 100 Best Waters flows freely from public fountains. The result is a town where water sounds are constant and every street corner offers drinkable spring water.
The old town preserves Edo-period merchant houses along narrow hillside streets leading to Gujo Hachiman Castle (reconstructed 1933, oldest wooden castle reconstruction in Japan). The town is famous for two traditions: Gujo Odori, a summer dance festival where the entire town dances through the night for 32 consecutive nights (July–September), and food sample production — 60% of Japan's plastic food samples (found in restaurant windows nationwide) are manufactured in Gujo by skilled artisans.
The town's abundance of clean spring water traces back to its position at the base of forested mountains that feed the river confluence below, and that natural advantage has shaped daily life here for centuries in ways more mundane than the postcard-perfect canals suggest — households still rely on the tiered spring systems for everyday washing rather than treating them purely as a scenic feature, and the informal etiquette governing which tier is used for what (drinking, rice, vegetables) is followed as a matter of course rather than performed for visitors. That the town also became a center for plastic food-sample production is a less obvious but genuinely local story: the craft developed here in the early twentieth century using techniques adapted from wax-casting traditions, and the same manual dexterity and patience once applied to lacquerware and small-scale artisan trades transferred naturally into an industry that now supplies restaurant window displays across the country. Both traditions, water management and food-sample craft, share a similar quality — skills developed for practical necessity that outsiders now travel specifically to see.
