Shizuoka oden (静岡おでん) is the prefecture's regional variation of oden (おでん, hot pot of simmered ingredients) distinguished by dark soy-based broth, ingredients served on skewers, and toppings of fish powder (魚粉, kezuri-bushi) and aonori seaweed. The broth is simmered for days, becoming nearly black from concentrated soy sauce, dashi, and beef stock. The dark color gives Shizuoka oden a richer, more intense flavor than Tokyo-style oden's lighter broth.

Ingredients include: daikon radish (大根, simmered until translucent), boiled eggs, konnyaku (konjac jelly), fish cakes, beef tendon, and black hanpen (黒はんぺん, Shizuoka specialty fish cake made from sardines with skin included, creating dark gray color). Everything is skewered for easy eating, and customers can order pieces individually. Shizuoka oden is served year-round as comfort food — winter brings warmth, summer allows eating chilled oden with cold beer.

인사이더 가이드

**Aoba Oden Street experience:** This narrow alley (青葉横丁, Aoba Yokocho) near Shizuoka Station has 20+ tiny oden shops — most seat 6–10 people at counter surrounding the oden pot. The atmosphere is nostalgic Showa-era working-class dining — dim lighting, aged wood interiors, regulars chatting with shop owners. Order by pointing at ingredients in the pot (if no Japanese) or ask for 'omakase' (chef's choice, 5–6 skewers). The dark broth's appearance is startling but flavor is savory-sweet-salty umami bomb. **Must-try ingredients:** Black hanpen (黒はんぺん, sardine fish cake, ¥200) — Shizuoka specialty not found in other regions, assertive fish flavor from sardines with skin/bones ground in. Beef tendon (牛すじ, gyusuji, ¥250) — simmered until gelatinous, collagen-rich. Daikon (大根, ¥180) — absorbs broth over days of simmering, becomes translucent and intensely flavorful. Sprinkle everything with fish powder and aonori seaweed — locals add generous amounts until ingredients are coated. **Drinking culture:** Shizuoka oden shops are drinking establishments first, food second — locals come for beer/sake with oden as snacks. Order beer (生ビール nama biiru, ¥500) or sake (地酒 jizake, local sake, ¥600–900/glass) to match the atmosphere. Conversation is encouraged — shop owners are gregarious and enjoy explaining oden to curious visitors. Budget 90–120 minutes for full experience including multiple rounds of drinks and oden.
