Shin-Shin（しん·しん）就是博多拉面该有的样子——汤头乳白清爽，没有海外仿作常见的那股腥味；极细直面、两片入口即化的叉烧，再撒上恰到好处的青葱。创办人曾在一兰工作，1999年自立门户后，很快就被在地人认定为福冈平衡感最好的一碗。
天神本店的内装简单得有点朴素——明亮、干净、上菜快。这里不是为了米其林星星而来的地方，而是让你理解为什么福冈人一周吃两三次拉面也不会腻。面快吃完时记得用「替玉」（加面，¥100）——这是规矩，不是选项。
