明太子——醃漬的辣味鱈魚卵——基本上是在福岡誕生的。故事始於1940年代末,在日韓國人企業家川原俊夫把韓式泡菜風味的明太魚卵(명란젓)改良成更溫和、層次更複雜的日本版本,以清酒、味醂和乾辣椒調味。他創立的福屋,自1948年起就在博多的同一個地點製作明太子。
福屋的明太子呈亮珊瑚紅、口感滑順,鹹甜之間帶著綿長而溫和的辣度。分為整條(粒明太子)與調味散裝(辛子明太子海苔)兩種。天神旗艦店設有試吃櫃檯,可以配白飯試三到四種——這是你在日本花得最值的¥200。商品備有適合空運的控溫包裝。
