Shin-Shin — 博多拉麵的靈魂
Shin-Shin(しん·しん)就是博多拉麵該有的樣子——湯頭乳白清爽,沒有海外仿作常見的那股腥味;極細直麵、兩片入口即化的叉燒,再撒上恰到好處的青蔥。創辦人曾在一蘭工作,1999年自立門戶後,很快就被在地人認定為福岡平衡感最好的一碗。
天神本店的內裝簡單得有點樸素——明亮、乾淨、上菜快。這裡不是為了米其林星星而來的地方,而是讓你理解為什麼福岡人一週吃兩三次拉麵也不會膩。麵快吃完時記得用「替玉」(加麵,¥100)——這是規矩,不是選項。
